Yummy Healthy Snacks Coming Up
Can the words snack and healthy even be in the same sentence? As I walk this health journey, I’m finding it can be tricky to find healthy & tasty snacks, but this bread I’m about to share with you totally fits the bill! A bread without flour…who knew this goodness existed!!
Let me introduce to you, Peanut-Butter Bread!! I originally found this recipe with sugar, so switched that for honey and also added some bananas, but this is also yummy without the bananas too.
So let’s get into it!!
First step, mix together 1/2 tsp. baking soda & 1 Tbsp. White Vinegar
Next step, add in 3 large eggs
Then, add 1 cup of peanut-butter & 1/2 cup of honey
(I use local honey and it does solidify after awhile, so an extra step to get it liquid again)
Lastly, mix in one mashed banana.
Then pour mixture into a greased (with coconut oil) bread pan.
Bake at 320 for 40-45 minutes.
After that, let cool for a few minutes, slice & enjoy!

- 1/2 cup of honey
- 1 mashed banana (optional)
As you can see here, this yumminess doesn’t last long!
